The 28-year-old baker, who set up in Sussargues ten months ago, came out on top among 25 entrants in the competition held on 22 September by the Salon des métiers de bouche at Montpellier’s exhibition centre. Sourdough, a long fermentation and Camargue salt made the difference, and he now has his sights on the regional and national titles.
